Restaurant managers and owners need a strong understanding of their restaurants' menu and of their employees' skills. This one week class provides owners, managers and chefs with the fundamentals of sushi preparation, history and culture. It has a minimum enrollment of five students.

   Managers, owners and chefs who want to develop sushi and Japanese cooking skills in an intensive class.

Goals:

   Accomplish a unique curriculum in each intensive class, combining both student requests and instructor ideas.
